The First Time I Made NiceCream

Have you heard of NiceCream or Nice Cream? I started to see it on some of the raw food blogs I follow and figured I would try it out. Basically, it’s 100% healthy, dairy free ice cream.

STOP.

Before you start thinking “oh, so it’s going to taste like my front yard?” Let me tell you that is not the case! The entire concept is blended fruit so, it’s going to taste like fruit not grass or dirt. šŸ™‚

Ok, this is the first time I ever made NiceCream. I’m going to share it with you and play with it some more this week so I can show off some better versions. But, it’s so good that I thought it was worth sharing now.

The base of it is frozen, blended bananas. That’s it. That’s your ice cream folks. Take ripe bananas, cut them into chunks and freeze them. Then, blend them into an ice cream consistency. You can add coconut milk, almond milk or any of those things to make it more smooth if you’d like but you really don’t need to add any juice, water or milk unless you want to do so.

After you blend your bananas, you can add any other type of fruit you’d like either frozen or not.

For the version in the picture, it is one layer of blended frozen bananas, one layer of blended frozen mango chunks followed by another layer of frozen bananas. The reason why I kept it mostly banana is because my husband loves bananas.

In a perfect world, those brown chunks you see in the picture would be chia seeds or flax seeds. However, since it turns out I am a human, those are actually chocolate chips. They’re organic though if that helps. šŸ™‚

Today, I’m going to make a blackberry version. It’s like a smoothie without the juice if you’d like to think about it that way. The end result is an ice cream taste that will blow you away and if you’re having one of “those” days, you can eat the whole thing and still fit into your jeans tomorrow! WOOT!

Nearly two years ago, I went gluten free. I made a lifestyle change and began to eat healthy and kicked the gluten. For me, this was not a decision based on a trend. I made the decision to go gluten free because I became extremely sick and something had to change.

That being said, it was not an easy road in the beginning. Over the last two years, I have learned to be creative with food and quite honestly, I have learned to love food all over again. In fact, I fell in love with healthy foods so much that I bought a local produce co-op just last year.

Recently, I found out LEAN CUISINE has recently introduced gluten free meals! I was so excited to find this out, I headed to Walmart to give them a try.

There are several great options and I was excited to find them! It is so nice to have a few of these in the freezer on those busy days. I thought when I became gluten free, I would never be able to eat frozen meals like these LEAN CUISINE gluten free meals, this has been a pleasant surprise.

Gluten Free Banana Bread

Gluten Free Banana Bread

This week’sĀ produce basketĀ was full of bananas,Ā I decided to make my house smell yummy and bake some banana bread. I am gluten intolerant so I made the following recipe gluten free, you can also substitute the eggs if you’d like.Ā I think it would taste even better with chocolate chips!

Ingredients:

3 Bananas (Peeled)
1/3 Cup Butter (Melted)
1 Cup Sugar
1 Egg (or sub with 1/4 applesauce)
1 tsp Vanilla
1 tsp Salt
1 tsp Baking Soda
1 1/2 Cups Flour (or Gluten Free Substitute)

Directions:

Preheat oven to 350 degrees and spray a loaf pan with nonstick cooking spray. In a large bowl, mix bananas, butter, sugar, egg & vanilla.

In a separate bowl, mix salt, baking soda and flour. Once mixed, add the dry mixture to the wet mixture slowly. I kept the banana mix going on my KitchenAid and added in the dry mix a little at a time until well mixed.

Then, simply cook 60 mins until lightly browned. YUMMY!!!!
