Plan Ahead & Eat Healthy

August 16, 2015 By Sarah Roe Leave a Comment

Skip the Snacks & Prepare Healthy Foods

One of the easiest ways to fall off the health wagon is to mindlessly reach for unhealthy snacks. Eating healthy is purposeful. It also takes planning and preparation.

When I pick up my produce from The Produce Gathering, I immediately wash and prepare the food into storage containers. My refrigerator becomes filled with washed, cut and prepared fruits and veggies. This means, when I’m needing a snack, healthy options are within reach!

As school is starting, we’re all worried about making lunches and getting to school on time. But, what happens after school? Usually, our kiddos (at least mine) are starving. Having healthy snacks ready to go will make it easy for your kids to eat healthy too.

Remember, if you buy healthy food, you will eat healthy food. It’s that simple. Be purposeful about the type of food you purchase and your preparation for the week. Eating healthy does not need to take a lot of time or effort above the norm, it simply takes a little thought.

Easy & Delicious Baked Quinoa Patties

May 1, 2015 By Sarah Roe Leave a Comment

Baked Quinoa Patties

Eating healthy is not nearly as difficult as you might think in fact, it can also be a bit of a fun experiment too! If you’re a quinoa fan or even if you’ve never tried it, this is a great recipe for you:

Baked Quinoa Patties

Prep: 10 minutes

Cook: 30 minutes

Total: 40 minutes

Servings: 8

Ingredients

  • 1 5oz. pkg. Hodgson Mill Quinoa & Brown Rice Mediterranean blend
  • 3 eggs (beaten)
  • 1/3 cup onion (chopped)
  • 2 small garlic cloves (diced)
  • 1 cup chopped kale (if you love kale, add 1 cup)
  • ½ cup gluten-free plain bread crumbs
  • ½ cup black beans (if you love black beans, add ½ cup)
  • 1 tbspn fresh lime juice
  • ½ cup parmesan cheese (shredded)
  • 4 tbspn olive oil

Instructions

Preheat oven at 400 degrees F.

Follow pre-packaged quinoa’s cooking directions. In this case, it directs us to boil 1¾ cup water to boil, add contents of package, stir well, reduce heat to low, and cover for 14-15 minutes or until liquid is absorbed. Remove from heat and let cool.

Dice onion and garlic cloves.

Place 2 tbsp olive oil into pan on medium heat and add chopped kale, onion, garlic, and lime juice. Sauté on medium heat for approximately 8 minutes or until colors deepen and onions are translucent. Remove from heat and let cool.

Baked Quinoa Patties

Beat 3 eggs in medium mixing bowl. Add quinoa and bread crumbs. Stir. In a separate mixing bowl, combine kale mixture, black beans, and shredded parmesan cheese. Combine both mixtures in medium mixing bowl. Stir well.

Use your hands to form 1½ inch thick patties. Smear 2 tbsp olive oil on baking sheet or aluminum foil. Place each patty approximately 2 inches apart.

Baked Quinoa Patties

Bake at 400 degrees F for approximately 16 minutes, flipping halfway through. Remove patties when they reach a light golden color.

Serve hot with a side of greek yogurt dip and cooked salmon. Enjoy your healthy meal. You’ve earned it!

I’m a huge smoothie fan and I love this recipe for a Spring Detox Smoothie! This is sure to get you feeling great!

Ingredients:

1 Apple (Cut up)
Large handful of Kale
1/2 to a whole Banana
A large handful of Strawberries (The more you add the sweeter + I like to freeze mine to make the smoothie really cold)
1/4 – 1 Cup Vanilla Almond Milk (depending on how thick you like it)

Directions:

First, chop all ingredients up and toss into blender. Before you start blending add the Almond Milk. Then, garnish with strawberries and enjoy!  This smoothie cleanses the liver and jumpstarts your metabolism. YAY for Spring!

Frugal & Healthy Fruit in a Jar

March 21, 2015 By Sarah Roe Leave a Comment

FruitinaJar-51c6e2bc

Recently, Jessica and I shared with your 80+ pound weight loss. We have both been excited about our lifestyle changes and our new look! We’ve also been sharing tips with you to make eating healthy even easier. If you’re wanting a creative way to store cut fruit and have snack cups ready to go then this is for you!

I purposely cut fruit and veggies and have them ready to eat throughout the week. This simple practice will prevent you from grabbing cookies or chips just because they’re “easier.” By cutting the fruit and storing it in a mason jar, you can easily grab one and take it to work or for a quick snack in the car. I simply washed and cut the fruit into chunks then layered it in the jar-it’s that easy!

Small changes make a BIG difference! Drink more water, get active and make the right food choices. These changes will change your life for the better!
